鹽水注射機(jī)可將鹽水及輔料配制的腌制液注入肉塊中，再通過真空滾揉使料液充分腌漬，滲透，可疏松肌肉組織結(jié)構(gòu)，有利于肌球蛋白溶出，并且由于添加劑對原料肉離子強(qiáng)度的增強(qiáng)作用和蛋白等特點(diǎn)的調(diào)整作用，注入配制的水溶液能使肉質(zhì)嫩化、松軟，從而提高了肉制品的出品率和改善肉制品的嫩度和口感。
可根據(jù)不同工藝要求，通過調(diào)節(jié)步進(jìn)速度、步進(jìn)距離、壓肉板間隙及注射壓力，將腌漬液定量、均勻、連續(xù)地注入產(chǎn)品中，從而實(shí)現(xiàn)產(chǎn)品的*注射效果。
